One intern was paid -nothing- to make fruit-leather beetles for three months. Yum but 👎. It raises questions about attaining sustainable excellence that doesn’t cause harm. “Soft Living” means living a life of comfort and low stress . I feel like we are all wanting to move back into the forest and get machines to do hard labour. I see history pulling backwards and forwards. This might be possible if we recognize unsustainable areas and bravely imagine better systems. Way to go Chef Redzepi. What a leader… (but I still want to eat pretend moss with candy bugs… so hopefully we can do everything)
